Are the stone crabs cooked?
Yes. In fact, stone crab claws are cooked once fishermen bring them to
shore. They are boiled for about eight minutes and then dipped in cold
water to stop the cooking process. All you have to do is crack and dip
them in our delicious homemade mustard sauce.
What is the shelf life of a fresh stone crab?
A fresh stone crab will taste delicious and fresh for about seven days
after delivery as long as you store it in a refrigerator. However, we
find that our stone crabs never spend more than a day in a refrigerator.
People just can't help but gobble them up.
How many pounds does a average person eat?
A average person eats about a 1 pound. A George Stone Crab lover,
however, can eat 2lb-3lbs. It's true. We seen it with our own eyes.
How are the Stone Crabs delivered?
We pack our stone crabs in a cooler. For local Miami delivery, we put
the claws on a bed of ice. We can even crack them for you.
If you live outside Miami, we use gel packs to keep the claws fresh.
They are delivered in a cooler by FedEx Standard/Priority Overnight.
Note: We never deliver frozen claws.
How do I store the Stone Crabs once I receive them
If you have any claws left over, put them in an open container and
keep them in the coldest part of your refrigerator. Or, you can put them
in a cooler with ice. Remember to drain the water every so often.
If I crack the claws and don�t finish all of them can I eat them the following day?
Yes. However, we recommend that you eat them the day you receive them
if they are cracked. Otherwise, the crab meat will be become dry and
lose all its sweet tasty freshness.
Where are stone crabs found?
The best stone crabs in the world are found in the Florida Keys and along the Florida coast.
Wikipedia tells us they are available in Connecticut to Belize, including Texas, the Gulf of Mexico, Cuba and the Bahamas.
Stone crabs are the only green food product in the world
The stone crab is never killed when caught. Only one claw is removed,
and then the animal is returned to the ocean. Claws are never removed
from egg bearing females. Once a stone crab is returned to the water, it
grows a new claw. That could take one to two seasons.
How long does the stone crab season last?
The stone crab season begins October 15 and ends May 15. Any place
offering stone crabs after the season are serving them frozen.
How many different sizes of claws does George offer?
George offers 4 sizes and on rare occasion sometimes five. George offers medium, large, jumbo, and colossal.

What are the black spots on my claw?
Those little spots are just bruises that the claw gets while living at
the bottom of the ocean. The spots are fine and the meat is never
harmed or bruised. We agree, the bruises are not aesthetically
pleasing.
Can you eat medium claws as an entree?
Yes, but you have to eat a lot to get full. We recommend medium claws as an appetizer.
I received my crabs and the meat was sticking to the shell. Why does that happen?
This happens sometimes when there is a cold front in Florida and the
cooler temps make the meat stick to the shell. It's all good to eat.
